Summer Friendly Recipes from the Farmstand Favorites Cookbook

Summer Friendly Recipes from the Farmstand Favorites Cookbook

During the summer, farm stands open their doors for you to buy fresh, healthy, and local produce. There is a wide range of fruits, vegetables, and other foods available at your local farmers market, and they are all highlighted in the Farmstand Favorites Cookbook from Hatherleigh Press. With over 300 easy to prepare recipes featuring local produce, it is the ultimate source for the freshest recipes to pair with farm-fresh food. Try out this delicious and refreshing recipe for Mango Sorbet:

Mango Sorbet

2 medium mangos, peeled and cubed
2 teaspoons sugar
3/4 cup yogurt

In a food processor, process mango and sugar until smooth. Add yogurt. Pour mixture into freezer container of an ice cream maker. Freeze according to manufacturer’s instructions. To prepare without an ice cream maker, pour mixture into an 8 by 4 inch freezer container. Cover and freeze 4 hours, whisking from time to time.

And try this recipe for Pasta Primavera, also from the Farmstand Favorites Cookbook:

Pasta Primavera

1 cup broccoli florets
1 cup sliced carrots
1 cup sliced zucchini
1 cup macaroni or rotini pasta
1 tablespoon margarine
1 tablespoon flour
1 cup skim milk
1/4 teaspoon dried basil
1/8 teaspoon black pepper
2 tablespoons parmesan cheese

Steam vegetables until crisp-tender, and cook macaroni according to package directions. For the sauce, melt margarine and blend in flour in a small saucepan. Gradually stir in milk and seasoning, leaving the cheese to the side. Cook over medium heat, stirring constantly, until sauce thickens. Remove from heat and blend in cheese. Pour over hot vegetables. Add macaroni and mix together.

The Farmstand Favorites series includes many different volumes detailing what you can do with the various fresh foods you can get at your local farm stand, such as apples, pumpkins, garlic, honey, and more. The series teaches the many health benefits of various foods, as well as tips for storing and preserving them and many recipes to use the foods in.
